Kerrymaid has once again partnered with the Craft Guild of chefs to create a series of great tasting dished using Kerrymaid Buttery. Craft Guild of Chef’s Chair Chris Basten takes on a British favourite – Pea & Mint Soup. Ingredients Serves 6 1kg Fresh peas 1 Small onion A few sprigs of thyme 1 Bay leaf 1L Cold water 25g Kerrymaid Buttery Sea salt and pepper 500ml Kerrymaid Single 500ml Milk 1 Sprig of mint Preparation Pod the peas and peel and thinly slice the onion Method Place pea pods, thyme and bay leaf into a large cover with the water and simmer for 25 minutes, strain and reserve stock. Sweat the onions in the Kerrymaid Buttery and season well, add pea stock Kerrymaid Single and milk and bring to the boil, add the peas and simmer for a further 4 minutes. Remove from the heat and blend well.
